Cloves are harvested from clove trees when flower buds reach maturity, then dried using traditional sun-drying or mechanical methods to achieve optimal moisture levels while preserving essential oils and aromatic compounds. The dried buds are sorted by size, colour, and quality, inspected for stem content and defects, and packed in food-grade containers with moisture barriers to maintain flavour potency and shelf stability. Cloves are sourced and exported by Jabali Madini Ltd from Kenya through the Port of Mombasa to spice blenders, food manufacturers, and beverage companies across Europe, North America, the Middle East, South Asia, and East Africa.
